Our Gallic neighbours use marmelade d'oignon as an accompaniment for pates and terrines. Our robustly English version is enriched by the addition of redcurrant juice. This makes it a splendid tracklement for cheddar cheese, cold meats, pies and game as well as haslet or brawn. For a real treat serve this marmalade with a cold pork fillet Wellington!
