Fresh ginger root is used to prevent the harsh taste of ginger powder zapping your taste buds before you've experienced the apricot! Thus a warm glow gently suffuses the palate without killing the flavour of cheese, cold meat, pork pie or cold fowl with which you may well use it. It is also excellent with curries as a change from mango chutney.
